Manage work load

Hello im new to forum, I was just wondering how you guys manage work load say you work your self and have 300m of walling to do this will keep me going for a good 3-4 months atleast, Do you guys go and still quote for jobs ? when you have plenty of work in front of you and just state on quote you wont be able to start to this date ?
